This is an uber easy dish which you can put enough variation into to make it just how you like it. Great to use with fresh meat, or use up that leftover roast chicken from last night.
- 300g Chicken
- 1 onion
- 1 grated carrot
- 2 tbsp Soy sauce
- 2 tbsp Tomato sauce
- 1 cup rice
- ½ cup peas
- Put the rice on (love my rice cooker) with the peas and a splash of soy sauce.
- In a little oil fry the diced onion and carrot.
- When soft add the chicken (diced) and brown.
- Throw in the sauces and mix through for a couple minutes. Too easy.
