This is so easy! Chuck it all in the oven with so little preparation, it’s one of those fab meals that you can turn on the oven and walk away while you do homework.
- 2 Chicken wings
- 2 cups diced veg (anything they like – potato, sweet potato, carrot, pumpkin – any veg is lovely oven-roasted)
- Place chicken wings in a baking dish in 200C oven and bake for 30 minutes.
- As soon as they’re in, peel and dice your veggies (about 1cm cubes – doesn’t need to be exact) and place on a baking tray and drizzle with oil (I use Rice Bran oil, Olive oil fine too. Best use a low or no cholesterol oil).
- Roast for 20 minutes and both will be ready to serve together.
