Cowboy Casserole

Sometimes it’s good to have a bit of fun with food for the kids. Cowboy casserole would go down with the fussiest of eaters, who doesn’t want to eat like a cowboy?

  • 500g beef mince
  • 1 onion
  • 2 tsp oregano
  • 2 tsp cumin
  • 1 beef stock cube
  • 1 large tbsp tomato paste
  • 1 tbsp Worcester sauce
  • small tin corn kernels
  • 2 tins baked beans
  • 1½ cups (dry) macaroni
  1. Put the macaroni on to boil.
  2. Dice onion and fry gently in a little oil until softened, add the cumin and oregano and stir until you can smell fragrance, then add the beef.
  3. When brown add the stock cube, tomato paste, Worcester and corn and mix well.
  4. Lastly add the beans and when the macaroni has boiled, add it to the casserole, pour it into an oven safe dish and give it 20 minutes on 180C.
  5. Serve topped with grated cheese.
