Eggy Rice Balls

Serves: 24 small

Ingredients
  • 1 cup cooked rice
  • ½ grated carrot
  • ¼ cup peas
  • 1 shallot diced finely
  • 1 tbsp BBQ sauce
  • 1 tbsp tomato sauce
  • 1 tbsp Worcester sauce
  • salt and pepper
  • 4 eggs
  • ½ cup milk
  • ½ cup grated cheese
Method
  1. Mix the rice, vegetables, sauces and salt and pepper.
  2. Spoon into a greased 24 hole mini muffin pan (or 12 medium size tray) almost filling each hole.
  3. Beat eggs and add milk and cheese, spoon very carefully into muffin holes filing to top.
  4. Bake for 15 – 20 min at 190C.
