Fried Noodles and Scrambled Egg

As usual, this is the easy way of making fried noodles, Mi Goreng or Yakisoba if we’re going to get technical. The flavour here is basic, but you can add spice for the adult version.

Fried Noodles and Scrambled Egg

Ingredients
  • Fried Noodles:
  • 1 onion diced
  • 1 carrot finely diced
  • ½ cup peas
  • 2 tbsp oil
  • 3 tbsp soy sauce
  • 1 tsp sugar
  • 2 packs dry noodles
  • Scrambled Eggs:
  • 3 eggs
  • ½ cup milk
Method
  1. Boil and drain noodles, and while boiling gently fry the onions, carrot and peas in oil a large frying pan or wok.
  2. When the noodles are ready throw them in along with the soy sauce and sugar and mix well. It’s as easy as that.
  3. For best results on the eggs, I gently stir them and the milk, then add them to a heated saucepan with some melted butter on the bottom. They don’t need to be stirred too much, they can get overworked. You know when they are done when the water starts to separate from the egg.
  4. Add egg to the wok and stir through gently.
