Little Piggy Patty Cakes

Great for theme parties or even just some fun in the kitchen, little piggy cupcakes are simple and yet so effective. The kids will be amazed, and then full of cake.

Little Piggy Patty Cakes

  • Cupcakes:
  • 125g soft butter
  • 1½ cups self-raising flour
  • ½ cup caster sugar
  • 1 tsp vanilla essence
  • 2 eggs
  • ½ cup milk
  • dozen patty cases
  • Icing:
  • 60g soft butter
  • 1½ cups icing sugar
  • 1-2 tbsp milk
  • pink food colouring
  • Decorations:
  • white marshmallows
  • pink Tic Tacs
  • pink wafer biscuits
  • metallic coloured cake-decorating balls
  1. Cupcakes – Preheat oven to 160C, beat the butter, sugar and vanilla until pale. Add eggs, one at a time, then the flour and milk, stir well until combined. Spoon mixture into patty cases and bake for 20 minutes.
  2. Icing – In a bowl beat the butter and icing sugar, adding the milk a little at a time. Add the pink colour. Either spread flat with a knife or using a piping bag swirl the icing around into the middle.
  3. Decorating – Cut the marshmallows in half and place in middle, sticky side up with two Tic Tacs for nostrils. Shape the ears with the wafer biscuits and add the little metallic candy balls for eyes.
