Stop giving meatloaf a bad name and try this recipe. It’s easy and tasty, serve with healthy veggies for dinner or slice into sandwiches for the lunchbox.

  • half kilo beef mince
  • 1 onion diced finely
  • ½ cup breadcrumbs
  • 1 egg
  • ¼ tin 440g tomato soup
  • 2 cloves garlic
  • 1 cup grated cheese
  • 1 tsp dried herbs, or 1 bunch fresh
  1. Mix all ingredients together in a bowl except the cheese.
  2. On a lined baking tray shape the meat into a loaf shape as best you can and bake for 30 minutes at 200C.
  3. After 20 minutes add the veggies to the oven, and at the 30 minute mark take out the meatloaf, sprinkle the cheese on top and put back into the oven for another 15 minutes.
