A nice and easy way to cook polenta into a tasty healthy dish for the kids. Good old baked beans can be substituted with kidney or other beans mixed with a bit of tomato based sauce.
- ½ cup polenta
- 2 cups water
- 1 large tin baked beans
- grated cheese on top
- Prepare the polenta by mixing it with the water and cooking in the microwave for 5 minutes, stopping once to stir.
- Layer the polenta and beans in a loaf tin (I did two of each layers) starting with the polenta on the bottom.
- Top with grated cheese and stick in the oven for 20 minutes.
- Served with corn on the cob and broccoli.
