Polenta and Beans

A nice and easy way to cook polenta into a tasty healthy dish for the kids. Good old baked beans can be substituted with kidney or other beans mixed with a bit of tomato based sauce.

Ingredients
  • ½ cup polenta
  • 2 cups water
  • 1 large tin baked beans
  • grated cheese on top
Method
  1. Prepare the polenta by mixing it with the water and cooking in the microwave for 5 minutes, stopping once to stir.
  2. Layer the polenta and beans in a loaf tin (I did two of each layers) starting with the polenta on the bottom.
  3. Top with grated cheese and stick in the oven for 20 minutes.
  4. Served with corn on the cob and broccoli.
