Polenta is basically cornmeal and can be used in so many ways. Some like it for brekkie, I like to whip some up for the kids if they are missing a cereal from their dinners. Can also impress a dinner party with a snazzy modern recipe. It has a creamy texture and only a subtle flavour so will take on whatever it is mixed with. You can find it in the health food section of the supermarket, or with other grains and meals, sometimes with nuts.
Here’s a nice easy way to cook some up in the microwave. It’s a small amount for 2-3 kids to accompany a meal so just multiply for what you need.
Mix 1 cup of water with 1/4 cup Polenta in a microwave safe bowl. Set microwave for 5 minutes, and halfway through give it a stir. Put it back in for the remainder of the 5 minutes. And voila! Too easy. If you want a larger quantity just double it, 1/2 cup Polenta with 2 cups water, same 5 minutes in the microwave.
