Here’s a fab gluten free recipe which would work well with either meatballs, rissoles or burgers. The combination of pork and pear is so lovely, the kids love it.
- 500g pork mince
- 1 pear peeled and cored
- 1 onion
- 2 cloves garlic
- 1½ cups cooked rice
- Best to cook the rice the day before, it’s easier to work with.
- Blend the onion, garlic and pear until in very small chunks.
- Mix all the ingredients together in a bowl, and shape rissoles about a handful size patty.
- Pop under the grill for about 15 minutes, best to flatten them a little so they cook through.
