Quick Chicken

As fast and easy recipes go, this one for quick chicken is right up there on those days when you’ve been too busy to plan dinner, but have a little leftover chicken in the fridge.

  • 250g cooked chicken
  • 1 onion
  • 1 grated carrot
  • 2 grated potatoes
  • small can corn
  1. Fry onion, carrot and potato for 5 minutes on high heat, add chicken and corn, put the lid on the saucepan and simmer on med-low for 10 minutes.
  2. You can jazz it up if desired with a little spicy sauce, some fresh herbs or even a piece of fruit. I sometimes like to use pear in my cooking – nice change.
