As fast and easy recipes go, this one for quick chicken is right up there on those days when you’ve been too busy to plan dinner, but have a little leftover chicken in the fridge.
- 250g cooked chicken
- 1 onion
- 1 grated carrot
- 2 grated potatoes
- small can corn
- Fry onion, carrot and potato for 5 minutes on high heat, add chicken and corn, put the lid on the saucepan and simmer on med-low for 10 minutes.
- You can jazz it up if desired with a little spicy sauce, some fresh herbs or even a piece of fruit. I sometimes like to use pear in my cooking – nice change.
