Red Velvet Cupcakes

Making treats for a ladies high tea or any red themed party or event, this a is a great red velvet cupcake recipe with a nice cream cheese icing.

  • 2 cups plain flour
  • ¼ cup cocoa
  • 1 tsp bicarb soda
  • 1½ cup caster sugar
  • 1 cup buttermilk
  • 200g butter
  • 2 eggs lightly whisked
  • 1 tbsp white vinegar
  • 1 tsp vanilla
  • 1-2 tsp red food colouring
  • Icing:
  • 250g cream cheese pkt
  • 60g melted butter
  • 2 cups icing sugar
  • 1 tsp vanilla
  1. Preheat oven to 170C, and line muffin pans with 18 cupcake patties.
  2. Put the flour, cocoa, soda and sugar into a bowl and mix through.
  3. In a separate bowl whisk the buttermilk, butter, egg, vinegar and vanilla until well mixed.
  4. Make a well in the dry mixture and add the wet.
  5. Stir through until thoroughly mixed, adding the red colouring at the end.
  6. Pour into patties equally, about ⅔ full, and bake for 20-25 minutes.
  7. Allow to cool before icing.
  8. To make the icing beat all ingredients together with an electric beater and ice the cakes.
  9. To add a little sparkle you can top with dyed sugar – in a small tub combine 2-3 tsp sugar with a couple drops red food colouring and shake with the lid on.
